Ingredients:
4 cloves garlic, crushed
1/4 lb cream cheese, cut into small pieces
3/4 lb linguine pasta, or other pasta
1 tsp rosemary, crumbled, or 1 Tbsp fresh, chopped
1 lb mushrooms, sliced
1/4 cup unsalted butter
2 tbsp parsley, chopped
1 cup heavy cream
Cooking Directions:
Melt butter in a heavy nonstick skillet over medium heat. Sauté mushrooms, garlic, rosemary and pepper to taste 5-7 minutes, or until mushrooms release juices. Stir in cream and simmer 3-4 minutes or until sauce begins to thicken. Season with salt to taste and set aside. Cook pasta in a large pan of boiling water 8-10 minutes, or until al dente. Drain and return pasta to saucepan. Stir in cheese and sauce until cheese melts. Sprinkle with parsley before serving.Nutritionist Recommended For:
